The crisp fall weather is upon us and I am all about meals that warm the soul right now. Just after I had my daughter, this almond butter and banana oatmeal was my go to breakfast. If you’re a breastfeeding mama, oatmeal has been shown to increase your milk supply. Oats are also known to help regulate blood sugar levels. This is a win-win! Filling, delicious and it warms the soul.

I have a bit of a sweet tooth and this almond butter and banana oatmeal absolutely satisfies that craving while also keeping me full for hours! I have made this recipe with regular oatmeal, or with my egg white oatmeal. You can read about how to make an easy egg white oatmeal here. What I love about adding egg whites to my oatmeal is it gives them an added protein boost as well as making them extra fluffy. Fluffy oats are delicious.
Sometimes I also like to throw some chia seeds on top for the added health benefits. It doesn’t change the flavor at all but gives your body so many more nutrients!

Almond Butter and Banana Oatmeal
A delicious almond butter and banana oatmeal, served on egg white oats or plain oats.
Ingredients
- 1/3 cup oats
- 2/3 cup water
- 1/4 cup egg whites
- 2 tsp maple syrup
The toppings
- 1 tbsp almond butter
- 1 medium banana
- 1 tsp cinnamon
- 1 tsp chia seeds optional
Instructions

Put the oats, hot water and egg whites in a bowl.

Microwave for 3 minutes, 30 seconds, stirring halfway through the time.

Once the oats are cooked, add 2 tsp of maple syrup and mix it in.

Top with almond butter, banana, cinnamon and chia seeds if desired.
