I am a lover of warm foods. I have always been someone who prefers a warm, delicious meal over a cold one, any time, any season. When I first discovered that I could whip up a deliciously warm breakfast in minutes that also satisfies my sweet tooth, I was hooked. I woke up every morning to make these 1 WW Smartpoint banana protein pancakes.

I love these pancakes because they are easy to make and low cost. This recipe uses Kodiak power cake mix, an absolutely delicious, high protein pancake mix. Since I first tried it I’ve been obsessed. A half a cup of mix will run you 5 Weight Watchers Smartpoints. In order to lower the amount of Smartpoints and save points for things that matter – hello, evening glass of wine – I use less of the Kodiak mix with 0 point items. Not only does this lower the points of the recipe, it stretches the mix out and therefore reduces the cost per pancake. Wins all around!

The key to these pancakes or any banana pancake I have found is to cook them on low-medium temp. I have read so many times in my group that people have tried the banana pancake recipe and they’ve turned out black. I have found that banana pancakes are very sensitive to heat. In order to have the pancakes turn out beautifully, patience and low heat is key.

For this recipe, I use my Nutribullet blender. I have spoken about it before in my smoothie recipes, it really is irreplaceable in my kitchen. It’s fast and blends everything I have made so far perfectly smooth.

Banana Protein Pancakes
A low smartpoint, low calorie breakfast recipe.
Ingredients
- 1 whole banana
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp kodiak cake mix
- cinnamon to taste
Instructions

Heat your non-stick pan on low-medium heat.

In a blender, mix the banana, egg and vanilla extract until smooth.

Pour the mixture into a bowl and add the kodiak cake mix and cinnamon to taste.

Spray the pan with cooking spray and pour in the pancake batter. Makes 3-4 pancakes depending on the size of the banana.

Once the pancakes begin to form bubbles and appear slightly cooked, flip them to cook the other side, about an additional 2-3 minutes.

When cooked, optionally top with fresh fruit, light whipped cream and syrup.
